~A Little Bit Of Everything Cookie~

Okay well I am going to be truthful here… this is my first recipe post and I really don’t know what to say. I am sure I am not the first to struggle with this problem, God I hope not. I want to sound smart but not obnoxious. I want to be witty but not stupid. Ah well I guess I am just going to have to wing this first recipe and hope that I improve with experience. So please be kind while reading this… crossing fingers here!

Well I must say that A Little Bit Of Everything Cookies was not my first choice for my first recipe post. My first choice was Rosemary Caraway Seed Bread but yeast, my old nemesis, bit my idea in the butt again by not rising. I am assuming, notice the first three letters in assuming fit me well when it comes to handling yeast, that it was just to cold in my kitchen which caused the yeast not to active properly. I am going to try it again but with a heating pad under the bowl with the bread dough and hopefully that will resolve that issue.

So I was now struggling with what was I going to post as my first recipe, since my first idea was shot down by my old nemesis, I decided that a good daughter should make the debut recipe of her new website an ode to her Mom and highlight one of the greatest cookie recipes that my Mom has ever developed in my opinion. Notice the suck up to my Mom *big grin here* I hope I get some great daughter points out of this. I love you Mom and thanks for saving my butt by giving your okay to share this recipe.

I call them A Little Bit Of Everything Cookie because you can put just a little bit of anything in them and they taste fantastic. For my Step-Father my Mom adds pecans and raisins but for me it the combination of coconut, toffee and semi-sweet/milk chocolate chips that ROCKS my cookie world!!  I remember the first time I bit into one of these little bit of heaven cookies like it was yesterday…

They were fresh out of the oven, they always taste the best that way to me, the combination of the coconut, which makes them really chewy, 2 kinds of chocolate chips, the touch of milk chocolate cuts out the bitter taste of the semi-sweet, and toffee chips, which makes them taste extremely buttery when a chip hits your tongue, was like AAAHHHHH!!! *the clouds parted from the sky, the sun came shining through and the angels up above sang “Hallelujah… hallelujah”… I swear they really did, okay well maybe that is a bit much but can you blame me just look at them…

A Little Bit Of Everything Cookie

A chewy buttery chocolate chip cookie.


  • 1 1/2 c. packed brown sugar
  • 1 c. soft butter
  • 1 tsp. vanilla
  • 1 egg
  • 1 c. quick cook oatmeal
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. coconut flakes
  • 1/2 c. milk chocolate chips
  • 1/2 c. semi-sweet chocolate chips
  • 1/2 c. toffee chips


  1. Preheat oven to 350°F, 325°F if using a convection oven.
  2. In stand mixer with paddle attachment add butter and sugar and cream together until light and fluffy.
  3. Add in egg and vanilla.
  4. Slowly add in oats, flour, soda, salt and cinnamon. Mix until all ingredients are well combined.
  5. Then by hand mix in coconut, chips and toffee. The dough will be hard to stir but it will be worth it.
  6. On parchment lined cookie sheets drop dough, about 1 tablespoon, 2 inches apart from each other and bake.
  7. When done remove cookies from oven and cool 2-5 minutes on parchment paper then move them to a cooling rack.
  8. Store cookies in air tight container.


I have found for chewy cookies it is best to cook dough for 10-11 minutes and for crisper cookies 12-13 minutes.
