Cinnamon Toffee Banana Breath with a Toffee GlazeBanana bread… oh banana bread… is a sentimental bread for me. I feel I should say an ode to banana bread but since I can’t think of anything that would rhyme well with banana I will nix the ode and just say that banana bread is special to me because it was one of the first items I learned how to bake and it is one of the oldest recipes that I own. This recipe has morphed over the years, I have had it over 35 years, but that is what I love about it. It is so simple but so delicious. In this version I have added cinnamon chips and toffee bits but you could easily add chocolate chips with a chocolate glaze if you wanted too.

Cinnamon Toffee Banana Bread with a Toffee Glaze

A moist tender loaf of bread with a fantastically addictive toffee sauce!


    For the Banana Bread
  • 1 stick unsalted butter at room temperature
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup buttermilk
  • 1 cup mashed ripe banana
  • 1 tsp. vanilla extract
  • 2 cups unsifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup mini cinnamon chips
  • 1/2 cup toffee bits
  • For the Toffee Glaze
  • 4 Tbsp. unsalted butter
  • 6 Tbsp. brown sugar
  • 6 Tbsp. heavy cream
  • A pinch of salt
  • 1/2 tsp. vanilla extract


    For the Banana Bread
  1. Preheat oven to 350°F, 325°F if using a convection oven.
  2. Line bottom of a 9 x 5 inch loaf pan with parchment paper.
  3. In stand mixer with paddle attachment add butter and sugar and cream together, on medium-high speed for 5 minutes, until the mixture is light and fluffy.
  4. Reduce the mixer speed to medium and add the eggs, one at a time, beating well after each addition.
  5. Reduce the mixer speed to low and add the buttermilk, mashed bananas and vanilla extract. Mix until well combined.
  6. Slowly add in the flour, baking soda and salt and mix until just combined.
  7. Then remove mixing bowl from stand mixer and add the cinnamon chips and toffee bits and mix by hand until chips and bits are evenly distributed.
  8. Scoop mixture into bread pan and bake 60-90 minutes or until top is golden brown and toothpick inserted in center of loaf comes out clean.
  9. Let loaf cool for 5 minutes in pan then remove loaf from pan, peel off parchment paper, and cool on rack until loaf is at room temperature.
  10. For the Toffee Glaze
  11. In a small saucepan over medium heat melt together butter, brown sugar, cream and salt.
  12. Once the butter is melted increase the heat to medium high and bring the glaze to a boil.
  13. When glaze comes to a boil decrease heat to medium and simmer gently for 3-5 minutes, stirring constantly, until glaze turns a dark nutty brown.
  14. Remove pan from heat and let the glaze cool completely.
  15. Once the glaze is cool stir in the vanilla and spoon the glaze over the bread.


Store bread in a air tight container. It will keep 3-5 days, but it has never lasted that long in my house.
