Tangy Blueberry Lemon Crumb MuffinsOkay in a way I can’t believe I am posting this recipe because I am just not a blueberry muffin fan. I know… I know… how could moi, Raven Jackman, not love blueberry muffins when blueberries are my favorite fruit? I do really, really love blueberries but to me almost all blueberry muffins taste like… well nothing. In store bought blueberry muffins the blueberries always taste dry and gritty and the muffin its self is just plain tasteless. And the mixes you buy down the grocery bakery isle aren’t much better, the muffin is still tasteless and the blueberries are so small and few in number that they might as well not be in the muffin at all. Ugh! So for many years I have totally avoided my favorite fruit in the muffin form.

Then one day I was doing my faithful Google image search for recipes and I decided for kicks and giggles *please no comments that is it not “kicks and giggles” I know they old says is different but this is a G rated family site* to see if I could find a decent blueberry muffin recipe that I just might be willing to try. The results for plain old blueberry muffins were numerous and the pictures were gorgeous but the recipes themselves did nothing for me. Then I thought what other flavor do I love that would go well with blueberries? LEMONS! Lemons, lemons, lemons those were the answer. I love lemons, but not lemon poppy seed muffins… lets not start down that road, and if I could find the right combination of blueberry juicyness to lemon tartness I would have a winner. So I searched for blueberry lemon muffins and a little gem of a recipe for Matt’s Lemon Blueberry Muffins popped up on the Cooking Channel’s website. It had it all… 1. lots and lots of blueberries, 2. the potential for lots and lots of lemon and 3. tons of tangyness, which means flavor!! I zipped up the lemon zest, because there can never be to much lemon flavor for me, and swapped out the creme fraiche for plain Greek yogurt, because it is easier to find in the store, added more crumb topping, gotta love that crunchy topping, and I found a winning recipe for Tangy Blueberry Lemon Crumb Muffins!

Tangy Blueberry Lemon Crumb Muffins

Tangy Blueberry Lemon Crumb Muffins

A light tangy lemon infused blueberry muffin with a crunchy top!

Ingredients

    Crumb Topping
  • 1 Tbsp. Butter, cold
  • 3 Tbsp. Sugar
  • 3 Tbsp. Flour
  • 1 tsp. Lemon zest
  • Pinch of salt
  • Muffins
  • 1 Tbsp. Flour
  • 1 1/2 C. Fresh blueberries
  • 2 C. Flour
  • 3/4 C. Sugar
  • 1/2 tsp. Baking soda
  • 1 1/2 tsp. Baking powder
  • 1/4 tsp. Salt
  • 1 C. Plain Greek yogurt
  • 2 Tbsp. Milk
  • 2 Tbsp. Fresh lemon juice
  • 1/4 C. Canola oil
  • 1 Egg
  • Zest of 1 lemon
  • 1 tsp. Lemon extract

Instructions

  1. Preheat your oven to 400°F, 375°F if using a convection oven.
  2. Line muffin tin with paper liners.
  3. In a small bowl toss 1 Tbsp. flour and fresh blueberries until blueberries are coated well in flour.
  4. In a small bowl combine crumb topping ingredients, cutting in butter with a pastry cutter or fork until topping has formed very small pea sized crumbs. Store topping in refrigerator to keep cold.
  5. In a large bowl combine flour, sugar, soda, baking powder and salt.
  6. In a medium bowl combine Greek yogurt, milk, egg, lemon juice, oil, lemon zest and lemon extract. Mix until well combined.
  7. Slowly add wet mixture into dry ingredients and stir together until all ingredients are just combined. Don't over mix or muffins will be tough.
  8. Gently fold in flour dusted blueberries, be careful not to break open the blueberries.
  9. Scoop muffin dough into paper liners and liberally sprinkle dough with crumb topping mixture.
  10. Bake muffins for 20-25 minutes or until muffins turn golden brown on top and tooth pick inserted into muffin centers comes out clean.
  11. Cool muffins to room temperature and store in air tight container for 3-5 days. Trust me they won't last longer then a day they are just that darn good!
