Have you had one of those days when you are going through the store and you see something and you think I have to make something with that? Well that is what happened to me going through my local grocery store last week. Nectarines round and sweet and that pretty orange-red color so ripe you could smell them from the front door, which was not that far considering they were only a few feet in with a big sign over them that said “First fresh fruit of the season”. As soon as I saw them I knew I was going to be making something with them that night.

But what to make? I will be truthful I love nectarines, I eat them all the time, but baking with them? That I normally do not do. Then I thought of this rustic tart I saw Giada making on the daytime Food Network reruns the other day and I thought that is it I will make a galette. Fresh Nectarine and Blueberry Galette

A fresh summer fruit galette sweetly spiced in a crisp crust!


    For the Crust
  • 1 C. Flour
  • 1/2 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Ginger
  • 1/8 tsp. Nutmeg
  • 1/2 tsp. Sugar
  • 1/3 C. Shortening
  • 3-4 Tbsp. Ice cold water
  • For the Filling
  • 3 Nectarines
  • 1/2 C. Blueberries
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Ginger
  • 1/8 tsp. Nutmeg
  • 3 Tbsp. Sugar
  • 1 Tbsp. Water
  • 2 Tbsp. Butter


  1. In a medium mixing bowl sift together all the the dry ingredients and spices for the crust.
  2. Add in the shortening and with a pastry blender cut in the shortening until the flour mixture resembles small pea sized crumbs.
  3. Add in the cold water, one tablespoon at a time, and with a fork stir mixture until all of the flour is moistened and a stiff dough has formed.
  4. Remove the dough from the bowl and shape it into a flat circle, wrap it in waxed paper and let the dough chill in the refrigerator for 1 hour.
  5. Preheat your oven to 375°F, 350°F if using a convection oven.
  6. With a paring knife cut the nectarines in half, remove the pits and slice them into 1/8 inch wide pieces.
  7. In a medium mixing bowl combine the nectarine slices, blueberries, spices and 2 Tbsp. sugar.
  8. Remove the chilled dough from the refrigerator and on a pastry board, or floured surface roll the dough into a 12 inch circle.
  9. Slide the dough onto a cookie sheet and arrange the spiced fruit on top keeping a 2 inch boarder of dough free of the fruit.
  10. Fold the boarder of the dough toward the center of the galette, overlapping the dough slightly and partially covering the fruit.
  11. Dot the top of the fruit with the butter.
  12. With a pastry brush moisten the dough edge with the water then sprinkle the whole galette with the final tablespoon of sugar.
  13. Bake the galette for 30-40 minutes until the crust is brown and the fruit is bubbling.
  14. Remove the galette from the oven and let it cool to room temperature on a cooling rack.
  15. Store the galette in an air tight container for 2-3 days.


You might have noticed that this recipe is low on sugar. The sweetness to this galette mainly comes from the freshness of the fruit so please make sure that the fruit you use for this recipe is fully ripe.
