Muggin' On The Go with Strawberry CrispWell this has been another ball buster of a week for me. I’m still having computer problems, I am stating to hate Hewlett Packer PC’s, and ended up the week with a huge vet bill for Coco, like over $600.00. On Sunday she was in extreme pain, panting heavily and her belly was as tight as a drum. I got her through the day then on Monday I tried to get her to her normal vet but the car ride was just not going to happen. After 10 minutes in the car she was writhing in the back seat in pain, she has never done that before, so I made it as far as the emergency vet hospital. I can look back and be thankful now that she is okay, at least with all the blood tests the vet ran I know she is healthy, but at the time I thought she might have a blocked intestine or bloating. All the tests they ran came out normal so I took her home with a general antibiotic and pain pills.

Then on Tuesday night she started panting in extreme pain again, I thought I was going to loose my mind, but to my amazement I finally figured out what was wrong… she was having massive muscle spasms in her back that were radiating down into her abdomen which was making it as hard as a rock. After a tiring 30 minutes of holding a hot thermal heating pad to her back, along with some help from a pain pill, I got her back to relax and my nerves to get back to normal. On Wednesday it was back to the vet for doggie muscle relaxers and anti inflammatory meds and now 24 hours later it was like never happened at all for her, for me my bank account is wiped out and I owe my mom $200.00. You moms and dads with kids… God bless you! I don’t know how you do it day in and day out.

Muggin' On The Go with Strawberry Crisp

But on a happier note I have a week and a half to go and then it’s back to school for me, yippee!!!  So in honor of the fact that I am going to be on the road for about 8 hours a week, going to a from school, I thought that I would come up with a new series of posts call Muggin’ On The Go. These recipes will be easy to make and easy to transport so anyone that has to eat on the go can make them ahead of time, store them in the refrigerator and take them with them when they need them. So without further ado I give you the debut muggin’ recipe.

Muggin’ On The Go with... Strawberry Crisp

Muggin’ On The Go with... Strawberry Crisp

A fresh strawberry filling covered in a crisp and crunchy oatmeal topping!

Ingredients

    For the Filling
  • 2 Tbsp. Flour
  • 1 1/2 Tbsp. Granulated sugar
  • 4 1/2 C.Fresh strawberries, hulled and sliced
  • 3 Tbsp. Fresh lemon juice
  • For the Crumb Topping
  • 2/3 C. Brown sugar
  • 1/2 C. Flour
  • 1/2 C. Oatmeal, quick cooking
  • 3/4 tsp. Ground cinnamon
  • 1/2 C. Butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F, 350°F if using a convection oven.
  2. In a large mixing bowl add in all the ingredients for the filling. Flour, sugar, sliced strawberries and lemon juice and toss them gently together to combine.
  3. Pour the strawberry filling into a lightly greased 8 x 8 baking dish.
  4. In a large mixing bowl add in all the ingredients for the crumb topping. Brown sugar, flour, oatmeal and cinnamon and toss them gently together to combine.
  5. Add in the cold cubed butter and with a pastry blender cut the butter into the dry topping ingredients until the mixture resembles small pea sized crumbs.
  6. Sprinkle the topping mixture over the strawberry filling, being sure to cover all of the strawberries evenly.
  7. Pop your pan into the oven and bake your crisp for 20-25 minutes or until the topping is golden brown and the edges are bubbling.
  8. When your crisp is done carefully remove it from the oven and let it cool till the pan is warm to the touch.
  9. Portion it out into single servings, top it with a scoop of ice cream and enjoy!
  10. Store crisp in a airtight container or in the refrigerator for 2-3 days.

Notes

The instructions given in this recipe are for a 8 x 8 baking dish but if you would like to make them in to go mugs feel free to. I did a layer of strawberries then a layer of topping, then another layer of strawberries with a final layer of topping and bake the mugs until the edges were bubbling.
